FSU’s famous Honey Fried Chicken has local flavor

TALLAHASSEE, Fla. – Florida State University’s famous Honey Fried Chicken has a sweet, local taste.
Each Friday, Seminole Dining’s three residence dining halls – the Suwannee Room, Seminole Café and the Figg Performance Table – serve golden brown chicken with Full Moon Apiary honey produced in nearby Monticello, Fla.
Full Moon Apiary is one of three local farms Seminole Dining has adopted. The relationship began when Seminole Dining expressed interest to Chapman Produce Co. about forming partnerships with area farms.
“The ‘Adopt a Farm’ program brings fresh, local and seasonal ingredients to our campus through partnerships with farmers in Florida,” Seminole Dining Executive Culinary Director Travis Johnson said. “The chefs use these ingredients to create recipes for students and guests every day. The focus of this program is to enhance the farm-to-table experience and support the community through buying local.”
Jefferson County’s Full Moon Apiary is operated by Becky and Tony Hogg, who have been raising honey bees and producing honey for 18 years. The couple started honey farming 18 years ago because their then-8-year-old daughter, Katherine Hogg, feared insects. The Hoggs started with two bee hives and now have hundreds.
“We wanted her to overcome her fears,” Tony Hogg said. “Now, she’s a master beekeeper.”
Seminole Dining receives 30 gallons of honey each month from Full Moon Apiary, and the honey is used with a variety of items, including the beloved Honey Fried Chicken.
Full Moon Apiary also offers beekeeping classes and is heavily involved in statewide apiary issues.
“It’s an amazing endeavor to get into,” Tony Hogg said. “You learn a lot about honey making and beekeeping.”
In addition to providing honey to Seminole Dining, Full Moon Apiary hosts farm tours for Seminole Dining employees and Florida State University students.+
“Taking students out to the farm for an afternoon is incredible,” Johnson said. “The students connect with the local farmers and share insight into what it means to partner with a local farm.”
